D.O. Ribera del Duero/Aalto 0.75l

Aalto is the iconic wine of Bodegas Aalto from the prestigious Spanish D.O. Ribera del Duero area and represents the modern style of Ribera del Duero, combining the power and concentration of old vineyards with the elegance and precision of contemporary winemaking. The wine has very good ageing potential, but is also enjoyable to drink now.

Grape variety and vineyard:
It is made from 100% Tinto Fino (Tempranillo), which comes from carefully selected vineyards spread across several villages of the region. The vines are often between 40 and 90 years old, which contributes to low yields and a high concentration in the grapes.

Production and ageing:
The production of Aalto is based on precise work both in the vineyard and in the cellar, with the aim of preserving the maximum character of the variety. The grapes are hand-harvested from more than 200 small plots and carefully sorted to ensure the highest quality. Fermentation takes place in both stainless steel and concrete vessels at a controlled temperature, which preserves the purity of the fruit and the expression of the terroir. Fermentation is followed by malolactic fermentation in barrels, which gives the wine finesse and structure. The wine then ages for approximately 12–16 months in new and used French and American oak barrels, where it gains complexity, elegance and subtle notes of spice, cocoa and wood, without losing its fruit intensity.

Taste and aroma:
The wine has a deep dark ruby colour and a complex aromatic profile. The nose is dominated by notes of ripe black fruit such as blackberries and plums, complemented by subtle hints of cocoa, spice, tobacco and quality oak wood, in which the wine ages for approximately 16 months. On the palate it is full, structured and yet elegant, with well-integrated tannins and a long, harmonious finish.

Food pairing:
Thanks to its fullness, concentration and elegant structure, the wine pairs wonderfully with bolder dishes. It is ideal with beef steaks, roast lamb, game or slow-braised meats, where it beautifully underlines the intensity of the flavours. It also works excellently with grilled dishes, charcuterie or stronger cheeses, such as mature Manchego or hard mountain cheeses.
For the best experience we recommend decanting the wine and serving it at a temperature of 16–18 °C, so that its aromatics and finely structured tannins can fully develop.
