This premium wine vinegar comes from the Andalusian region of Montilla-Moriles and is made exclusively from Pedro Ximénez grapes. Thanks to the traditional criaderas y solera ageing system, it ages for at least 10 years in American oak barrels, giving it an exceptionally delicate, harmonious flavour with notes of wood, dried fruit and gentle acidity.

Origin and production
Vinagre Gran Reserva Solera from the Pérez Barquero winery comes from the Montilla-Moriles region in the Spanish province of Córdoba. This vinegar is made exclusively from Pedro Ximénez grapes, which grow on typical limestone soils. The vinegar ages using the traditional criaderas y solera method, which is also used in sherry production. Through ageing in American oak barrels for at least 10 years, the vinegar earns the designation "Gran Reserva", which is a guarantee of exceptional quality.
Appearance, aroma and taste
The vinegar has a beautiful clear chestnut colour with amber highlights. The aroma is intense and complex, with dominant notes of wood, caramel and dried fruit. The flavour is delicate, balanced, with pronounced but pleasant acidity and a long, elegant finish. Thanks to the long ageing, this vinegar has a harmonious and full character.
Use in the kitchen
This vinegar is wonderful for seasoning traditional dishes such as gazpacho or salmorejo. It excellently complements vegetable salads, stews, marinades or escabeche-style dishes. Thanks to its delicate acidity and rich flavour, it can also enhance modern preparations of meat, fish or vegetables, or be used as part of vinaigrettes and cold sauces.
Vinegars labelled "Gran Reserva" are considered the highest class within the Montilla-Moriles protected designation of origin.
