This exceptional wine vinegar is made from 100% Pedro Ximénez grapes, typical of the Montilla-Moriles region in Andalusia. It ages using the traditional criaderas y solera method for more than 10 years in American oak barrels, giving it extraordinary complexity and delicacy.

Origin and production
Vinagre Gran Reserva Solera from Pérez Barquero is made from Pedro Ximénez grapes in the Montilla-Moriles region, Córdoba. The vinegar is produced by fermenting high-alcohol wines, followed by long ageing in American oak barrels using the traditional criaderas y solera system. The system and at least 10 years of ageing earn it the designation "Gran Reserva".
Appearance, aroma and taste
It has a clean, clear chestnut to mahogany hue. The aroma is intense and elegant, reminiscent of dried grapes, honeyed nuances and notes of oak wood from the long ageing. The flavour is delicate, honeyed, balanced, with pleasant acidity and a medium to long aftertaste.
Use in the kitchen
It is excellent as a seasoning. It suits salads, roasted vegetables, escabeche and marinades. It works wonderfully in cold Mediterranean cuisine as well as in Asian preparations with a sweet-and-sour character.
The product falls under the Montilla-Moriles protected designation of origin, where vinegar labelled "Gran Reserva" must age for at least 5 years; this particular one, however, aged for more than 10 years, placing it among the exclusive gastronomic specialities.
