A Gran Reserva balsamic wine vinegar made from the Pedro Ximenez variety. This handcrafted Chef Special line, intended for leading chefs, comes from the Toro Albalá cellars. This Gran Reserva vinegar comes from a careful selection of very old Oloroso wines and a reduction of must from dried Pedro Ximénez grapes, which give the vinegar extensive aromatic complexity. Intense ebony colour, bright with pronounced iodine-like touches. The flavour is very fruity, with pronounced notes of raisins and oak wood - complex, intense and unique. The Toro Albalá winery was born in 1922 in the heart of the Córdoba countryside. Its history was begun by the smallholder José María Toro Albalá, in whose mind was born the brilliant idea of ageing old wines to create winemaking treasures that would satisfy the most discerning palates. Later generations continued his work and passion, and thanks to their careful craftsmanship and love of the trade, wines of first-class quality are produced, served in the best restaurants in the world.
