These excellent mussels come from the Rias Baixas region in Galicia, known for its high-quality seafood. After careful selection and thorough rinsing, the mussels are steamed and then lightly fried in olive oil to remove the byssus, the fibres by which they attach themselves to their surface. The mussels are then hand-packed and preserved in a spicy garlic marinade, which brings out their superb flavour.
Mussels are best enjoyed chilled with a quality white wine or vermouth, or you can use them to add something special to your festive table as a starter.
