Vineyard: Indòmit Blanc de Noirs Gran Reserva Brut Nature is made from Garnacha grapes, grown in vineyards in the Penedès region, specifically in the Valls d'Anoia-Foix area, which is part of Comtats de Barcelona. This region is known for its mild Mediterranean climate and high altitudes, which contribute to the production of quality cavas.

Ageing: It ages on the lees for at least 30 months, which gives it pronounced complexity, finesse and a long finish.

Taste and aroma: Light golden with delicate pinkish highlights. The flavour of this cava is dry, clean, full-bodied with a long, harmonious finish. Notes of fruit, nuts and delicate toast appear, supported by fresh acidity. An aroma of ripe fruit, delicate pastry and hints of lees maturity.

Tasting notes: It excellently accompanies sushi and sashimi, where its freshness beautifully balances the saltiness and fattiness of the fish. It also pairs wonderfully with seafood, such as prawns, mussels or oysters, and with baked or grilled fish, especially white varieties such as bream or cod. Thanks to its dryness and delicate lees notes, it also goes well with soft cheeses such as brie, camembert or fresh goat's cheese. It also goes excellently with tapas or traditional Catalan dishes, such as tortilla de patatas or bread with tomato and jamón ibérico.
