Mestres L'Assemblatge 2007‑2009‑2012‑2017 is a prestigious Gran Reserva Cava from the Penedès region, created by blending grapes from several vintages to produce a balanced, complex and elegant sparkling wine.
Thanks to long ageing on lees it gains fine bubbles, a rich texture and aromas of white fruit, delicate flowers and pastry with a mineral touch.
The grapes come from the Mestres family's old vineyards, hand-harvested, in a terroir with clay-limestone soil and a Mediterranean climate, which gives the wine depth, freshness and a sophisticated structure.
Ideal as an aperitif or with seafood, fish and festive starters.
D.O. Cava/Mestres, L´Assemblatge 0.75l

Grape variety:
Made from the classic traditional Spanish varieties used for Cava, Macabeo, Xarel·lo and Parellada, which provide a balance between fruitiness, structure and freshness.
Vineyard:
Among the oldest and most traditional in the region. Most of the plots are 40–80 years old, with low yields, hand-tended and planted in soils rich in calcium and clay, which gives the wine a distinctive mineral energy. The climate is Mediterranean with a mild sea influence, ensuring even ripening of the grapes, and the varieties Xarel·lo, Macabeo and Parellada gain, through long ageing, the complexity, freshness and structure characteristic of prestigious Gran Reserva Cavas.
Ageing:
The wine is made using the traditional method (secondary fermentation in the bottle – champenoise), as required for Spanish Cava. As a Gran Reserva it ages far longer than standard Cava, ensuring a richer structure, fine bubbles and complex aroma. A minimum of 30 months on lees is required under D.O. Cava rules, often more for Mestres' prestige cuvées.
Taste and aroma:
The taste and aroma are dominated by the characteristic traits of a well-matured Gran Reserva Cava, a clean, dry profile with aromas of white and yellow fruit, delicate citrus notes, yeast and a light pastry undertone from long ageing on lees, complemented by a fine structure and elegant bubbles.
Tasting notes:
Recommended serving temperature is 8–10 °C as an elegant aperitif or paired with delicate dishes such as seafood, fish, light pasta or vegetable starters.
Alcohol content: 12%
Origin: Spain, D.O. Cava (Penedès) – one of the most traditional appellations for classically fermented sparkling wines. (Sant Sadurní d'Anoia)
The family winery Mestres is known for being among the producers with exceptionally long ageing of their wines, often 4–5+ years on lees, which is significantly more than the minimum required for Gran Reserva Cava. This practice increases the complexity and finesse of the bubbles, similar to traditional Champagne.
Name and cuvée:
"L'Assemblatge 2007‑2009‑2012‑2017" means that the final Gran Reserva is a blend of wines (assemblage) from several vintages, a method used to achieve greater complexity, harmony and a stable style of wine. Each year contributes different nuances - older vintages can lend structure and depth, younger ones freshness and fruitiness.
2007 – deeper structure and maturation
The year 2007 was rated as good to very good in many Spanish wine regions. Sufficient warmth allowed for even ripening of the grapes, contributing to a cuvée with deeper texture, a firm acidity and richer structure, ideal for longer bottle ageing.
2009 – balance and quality
Similarly to 2007, 2009 is rated as very good in many parts of Spain, with relatively stable growing conditions and temperatures that did not put extreme stress on the vines. Wine from these grapes usually adds balanced fruitiness and freshness to the blend, nicely complementing the structure of the older vintages.
2012 – freshness and clear aromatic contours
Conditions in 2012 were very good, resulting in grapes with a good balance of sugar and acidity, which shows in the cuvée as fresh fruity notes and vibrant aromas, particularly important for the fresh character of Cava.
2017 – fullness and complexity
The year 2017 was considered stable and very good to above average in most Spanish regions, meaning wines from this vintage bring fuller fruitiness and greater depth of flavour. Blended with the other vintages, it adds to the complex profile that is desirable in a Gran Reserva Cava.
