Sara Pérez and René Barbier, known for their sensitive work with terroir and their organic approach, present with Dido Blanc an authentic white wine from the Montsant region. This wine is made with an emphasis on purity of varietal expression and the freshness typical of the region's high-altitude vineyards.
Grape variety: Macabeo 50%, Garnacha Blanca 40% and Xarel·lo 10%.
Vineyard: The Garnatxa comes from three different plots in the Marça and Falset area. The first plot is 70 years old and lies in an earlier, warmer part of the Montsant D.O. The second plot, 25 years old, is situated in Coll de Falset, which is more energetic and fresher, balancing the warmth and grape density of the first plot thanks to good acidity, low pH and spicy aroma. Two further Macabeu plots, over 70 years old, lie in cooler areas on the border of D.O.Q. Priorat. All the varieties grow on white limestone soil, which gives the wine its mineral character.
Production and ageing: The wine is made with minimal intervention; fermentation takes place spontaneously in stainless steel tanks and concrete vessels to preserve natural freshness and aromatic purity. Ageing takes place briefly on the lees, which gives the wine a gentle creaminess and complexity.
Taste and aroma: Dido Blanc has a straw-yellow colour with a slight greenish tinge. On the nose it offers fresh aromas of citrus, green apple and white flowers, ripe fruit, raisins and a characteristic dry, light oxidative touch with nutty tones, which gives the wine gastronomic strength. On the palate it is fresh, clean, with beautiful acidity and well balanced. The finish is long, mineral and earthy. Dido Blanc is an expressive wine that is definitely not "average".
Food pairing: It pairs perfectly with light dishes such as fish, seafood, salads, light poultry or mild cheeses. The recommended serving temperature is 8–10 °C, so its aromatic nuances can fully develop.
