It is made from the Hojiblanca variety and has a very intense aroma of freshly harvested olives that is, at the same time, perfectly balanced. In the background you can pick out green apple, cut grass, mint and thyme. On the palate it is sweetish at first, but later develops a flavour of young almonds - lightly bitter and delicately piquant.
