Ausás Interpretación is a top red wine from the prestigious Ribera del Duero region, presenting a distinctive interpretation of the Tempranillo variety by the experienced winemaker Xavier Ausás.
It is made from carefully selected grapes from older vineyards and is characterised by an emphasis on purity of expression, elegance and harmony.
The wine ages for approximately 14 to 16 months in French oak barrels, giving it a complex structure, fine tannin and a long, balanced finish.
Both the nose and the palate reveal notes of ripe fruit, spice and delicate wood, which together create a characteristic and authentic expression of the region.

Ageing wine in a larger bottle is considered to produce higher quality, because the smaller ratio of oxygen to wine volume results in slower and more even oxidation, leading to a calmer development of the wine, better preservation of freshness, fruitiness and aromatics, and at the same time a gradual, harmonious development of complex notes. A larger volume is also more resistant to temperature fluctuations, which keeps the wine more balanced, more refined and gives it a longer ageing potential than the same wine in a standard bottle.

Vineyard:
The grapes come from several carefully selected vineyards in the prestigious Ribera del Duero region. The winery works with long-established, trusted grape growers and selects plots with varied soil composition, from chalky and clay soils to stony ones. The vines are often 40 years old or more, which contributes to lower yields but higher concentration and complexity in the grapes. The diversity of vineyards and microclimates makes it possible to create a wine with a rich, layered character and an authentic expression of the region.

Production and ageing:
Each plot is processed separately to preserve its specific character. Fermentation is carried out under controlled conditions with an emphasis on extracting aromatic compounds and fine tannins. The wine then ages for approximately 14 to 16 months in French oak barrels, which are carefully selected to support the wine's structure without suppressing its fruit expression. After ageing, the individual batches are blended, creating a harmonious and balanced cuvée.

Taste and aroma:
The wine's aromatic profile is complex and elegant. The nose is dominated by notes of ripe red and black fruit, such as cherries, plums and blackberries, complemented by delicate spicy, floral and balsamic nuances. Over time, notes of cocoa, tobacco or delicate wood may also appear. On the palate the wine is full-bodied, structured and at the same time very refined. It stands out for its balanced acidity, gently rounded tannins and a long, elegant finish with a mineral undertone.

Food pairing:
This wine is ideal paired with bolder dishes. It goes wonderfully with beef steak, lamb, game or slow-roasted meat. It also pairs excellently with grilled specialities and mature hard cheeses. Thanks to its elegance, however, it also holds its own alongside modern cuisine and more sophisticated dishes.
