The 2021 vintage is considered very high quality and balanced. The combination of favourable climatic conditions and careful grape selection produced wines with pronounced aromatics, good structure, fresh acidity and a long ageing potential.
A larger bottle format can cause subtle differences in the wine's development over time, because in a magnum bottle there is a lower ratio of oxygen to wine volume, which leads to slower and more even ageing, better integration of flavours and sometimes even greater elegance and complexity with longer storage.






Pago de los Capellanes Reserva wine comes from the renowned family winery Pago de los Capellanes, based in the village of Pedrosa de Duero in the very heart of the Spanish wine region of D.O. Ribera del Duero. The winery is known for its emphasis on vineyard work, low yields and a traditional approach to winemaking that fully expresses the character of the local terroir.
The combination of favourable climatic conditions and careful grape selection produced wines with pronounced aromatics, good structure, fresh acidity and a long ageing potential.
Grape variety: 100% Tempranillo (Tinta Fina), a variety typical of the Ribera del Duero region.
Vineyard: The grapes come from the oldest vineyards of the winery, some of which are planted with vines older than 80 years. The vineyards are located at an altitude of approximately 800–900 m above sea level on clay-limestone and stony soils, which give the wine depth, elegance and a mineral character.
Production and ageing: After hand-harvesting and thorough grape selection, a cold maceration follows, together with controlled fermentation in stainless-steel tanks. Malolactic fermentation occurs naturally. The wine then ages for approximately 18 months in French oak barrels, where it gains complexity, delicate spiciness and structure.
Taste and aroma: The aroma shows ripe red and dark fruit such as cherries, blackberries and plums, complemented by notes of cocoa, vanilla, sweet spice and light toast. On the palate the wine is full, velvety and harmonious, with fine, mature tannins, fresh acidity and a long, elegant finish.
Food pairing: Recommended serving temperature 16–18 °C. It pairs wonderfully with roasted and grilled red meat, lamb, game, slow-braised dishes or with mature cheeses such as Manchego Añejo or Zamorano.
