Its flavour is harmonious and fresh, characterised by a sweet base with a well-balanced pungency and bitterness. The Cosecha extra virgin olive oil is made from the Picual variety, typical of the Jaén area in Spanish Andalusia. The oil has a medium fruity aroma with a hint of ripe tomatoes and freshly cut grass. The flavour is very harmonious, with a sweet base balanced by a pleasant bitterness. Overall, the oil is rather bold. It is suitable for fish, salads, cheeses or meat. Melgarejo is a family business founded in 1995 by the sons of Francisco Melgarejo and Juana Cordero, in the hope of continuing the work of their ancestors from the last two centuries. The olive mill is located in the town of Pegalajar in the province of Jaén. The harvest takes place at the beginning of November, after which the oil is transferred into stainless steel tanks and inerted with liquid nitrogen.
