Zárate Caiño Tinto is a red wine made by the Zárate winery in the Salnés valley in the Rías Baixas region. Zárate Caiño Tinto is a single-variety wine made from Caiño, a native variety from the Salnés valley, a late-ripening variety that produces very fruity wines with high acidity. The grapes come from an old vineyard more than 60 years old with granite soil. Harvesting is done by hand, and the grapes are selected directly in the vineyard. Once the grapes arrive at the winery, they are trodden without destemming in an open vat, where fermentation takes place using the pigeage method for four weeks. After this long maceration, good extraction of both colour and aroma is achieved. Zárate Caiño Tinto is aged for 12 months in French oak barrels that are 3 years old. After ageing, the wine is bottled without filtration or fining. If you want to try this wine - hurry! Only 1,250 bottles were produced. In the bottle awaits a fresh red wine with character. It offers red fruit with a surprisingly rich, expressive and seductive flavour. The aroma is softened by elegant oak, which nevertheless blends completely into the red fruit on the palate. The taste is very fresh, lively, with a clinging fruit-skin character and a predictably high, maritime acidity. Thanks to its freshness, this wine will be perfect with white meat and fattier fish, or simply as an aperitif. We recommend serving it at a temperature of 14°C.
