Zamorano, Sheep's cheese Vicente Pastor
Zamorano is a traditional Spanish sheep's cheese from the province of Zamora, made by the family firm Vicente Pastor from the milk of local Churra and Castellana breeds.
It ages for 5–9 months, with the longer "Reserva" variants maturing for over a year, giving it a firm structure and a pronounced flavour with subtly sweet and nutty notes.
The cheese is best served at room temperature and pairs wonderfully with red wines, mature cider, crusty bread or dried fruit and nuts.
