Sara Pérez and René Barbier are among the most prominent figures in modern Catalan winemaking, and their Venus La Universal project in the Montsant region exemplifies the combination of an organic approach, terroir fidelity and deep understanding of wine. Dido La Universal is their red wine, which captures the balance between elegance, energy and natural structure, with an emphasis on harmony between variety, soil and man.

Grape variety: The wine is a blend predominantly of Garnacha, complemented by Carignan and a small amount of international varieties, such as Syrah, Merlot or Cabernet Sauvignon, depending on the vintage. Garnacha plays the leading role here, giving the wine its finesse, fruitiness and typical Mediterranean roundness.

Vineyard: The grapes come from organically farmed vineyards in the Falset area, where clay-limestone soils predominate. The plots are managed with maximum respect for nature: hand harvesting, low yields, biodiversity and zero use of systemic chemical products.

Production and ageing: Fermentation happens spontaneously using native yeasts. The maceration and fermentation are gentle, to preserve the delicate character of Garnacha. The wine then ages for approximately 9–14 months in a combination of older French barrels of various sizes (barrique and larger foudre) and partly also in concrete vessels, which support elegance and purity.

Taste and aroma: It has a deep ruby colour and offers aromas of red and black fruit (cherries, plums, blackberries), together with notes of Mediterranean herbs, violets, gentle spice and minerality. On the palate it is full, yet fresh, with silky tannin, balanced acidity and a long, elegant finish. An expressive yet approachable wine with distinctive character.

Food pairing: Pairs wonderfully with grilled or roasted meat, game, charcuterie and dishes with pronounced herbs and spices. It also pairs beautifully with medium-matured cheeses or roasted vegetables. Recommended serving temperature: 15–17 °C.
