Venus 2019 is the flagship wine of the Venus La Universal winery, the personal project of Sara Pérez and René Barbier IV. It is an embodiment of their philosophy: respect for the soil, the landscape and the natural cycle. The wine is a tribute to femininity, intuition and harmony, while wonderfully reflecting the terroir of the Montsant region.
Grape variety: The main role is played by the traditional Garnacha, supplemented with varieties such as Cariñena and Syrah.
Vineyard: The grapes come from various plots around the village of Falset. The soils are slate, sandy and clay, which gives the wine complexity. The vineyards are farmed organically and with maximum care, with hand harvesting. Emphasis is placed on biodiversity, balance and minimal intervention in nature.
Production and ageing: The grapes are harvested entirely by hand, in several stages according to the ripeness of the individual plots. Sara and René prefer a later harvest, which ensures balanced ripeness of the grapes and complexity. Each plot is harvested separately, and the grapes are carefully sorted. Fermentation takes place spontaneously with native yeasts. The wine ages for approximately 18 months in large French oak barrels (foudres) and partly also in concrete.
Taste and aroma: On the nose it opens delicately and in layers. Notes of ripe cherries, morello cherries and redcurrant dominate, complemented by dried herbs, violets, freshly ground pepper and a light smoky minerality reminiscent of graphite or slate. On the palate the wine is medium-bodied to full-bodied, with a pronounced fruit component in the form of juicy red fruit, supported by taut acidity and fine tannins. The finish is long, elegant and dry, with a hint of cocoa, herbs and the stony salinity typical of Montsant terroirs.
Food pairing: This wine wonderfully complements a whole range of dishes built on depth of flavour and aromatic layers. It goes excellently with stewed meats, such as lamb with rosemary, braised beef cheeks in wine or venison ragout. You can also enjoy it with spiced Mediterranean dishes, aubergine or sun-dried tomatoes. It complements grilled mushrooms and maturing cheeses such as Manchego. The ideal serving temperature is 16–18 °C.
