Toro Albalá, Don P.X 2020, D.O. Montilla Moriles, sherry, 0.375l

Don PX from Toro Albalà is a fortified wine with pronounced residual sugar, made from 100% Pedro Ximénez grapes harvested in August. The grapes are then dried on the ground on traditional jute mats and turned by hand so as to keep them intact. The sugar level at the end of pressing reaches 500 g/l. Fermentation takes place in steel tanks and is stopped once a predetermined alcohol content is reached, with the must being fortified by adding alcohol obtained from distilling its pomace. It is refined for 12 months in stainless steel vessels It shows a dense, consistent body with an intense aroma of dried fruit, chestnut honey, raisins, citrus peel and a light hint of saffron. The mouthfeel is broad, rich, full and pleasantly sweet, softened by a lively, tangy freshness. We recommend serving with chocolate desserts, blue cheeses and mature cheeses.
