Toro Albalá, Don P.X. Seleccion 1980, sherry, 0.75l

Toro Albalá Don P.X. Seleccion sherry, from the D.O. Montilla Moriles region, is made from the eponymous Pedro Ximenéz variety. This is a naturally sweet sherry with a very dark mahogany colour with copper glints. A delicate aroma of candied fruit, dark chocolate, liquorice, roasted coffee and black pepper. A full, intense flavour with good structure, carob notes and a long coffee and chocolate finish. Sherry Toro Albalá Don P.X. Seleccion is made in the traditional way using the soleras system. Casks of American oak are stacked on top of one another. At the bottom are the casks with the oldest sherry, at the top the youngest, and the wine is gradually transferred downwards. Sherry Toro Albalá Don P.X. Seleccion thus ages for more than 40 years. It pairs perfectly with foie gras, desserts, blue cheeses, nuts and sausages. We recommend serving at a temperature of 12-14°C. Sherry Toro Albalá Don P.X. Seleccion is simply such a wonderful finish to a whole dinner that you won't want dessert or coffee! A brilliant choice for a social gathering or a soothing midday glass.
