Cabrales cheese is a distinctive traditional blue cheese from the Asturias region, made in the mountainous Picos de Europa region by the family cheesemaker Quesería La Pandiella.

It is made from a blend of cow's, sheep's and goat's milk and matures for several months in natural caves, where the characteristic blue-green veining of noble mould develops. Thanks to this traditional maturing, the cheese acquires an intense, piquant and aromatic flavour with a creamy to slightly crumbly texture, making it one of the most distinctive Spanish cheese specialities, ideal for cheese boards, with bread, or as a bold addition to hot dishes.

Cabrales cheese is a traditional Spanish blue cheese originating from the Asturias region, specifically from the mountainous Picos de Europa region. It is made by the family cheesemaker Quesería La Pandiella from a combination of cow's, sheep's and goat's milk, which gives the cheese a rich and complex flavour profile.

After the milk is curdled with rennet, the curd is cut by hand, placed into moulds and left to drain naturally without heavy pressing; the cheese is then salted and pierced to let in the air needed for the blue mould to develop. It then matures for 2–4 months in natural limestone caves, where stable humidity and temperature allow the typical blue-green veining and intense aroma to form. Thanks to the combination of three types of milk and cave maturing, Cabrales has a very pronounced, piquant and complex flavour with a creamy to slightly crumbly texture, which makes it one of the most characteristic blue cheeses of Spain.

Cabrales is known for its intense, piquant and aromatic flavour. Thanks to its boldness it goes wonderfully on cheese boards, with bread or fruit, but also in sauces, with meat or pasta, where it adds a characteristic depth and pronounced flavour typical of traditional Asturian blue cheeses.
