Cider, known in Spanish as sidra, is traditionally made in northern Spain, in the Basque Country and Asturias. Sidra is dry, tastes slightly sour and is almost free of carbon dioxide. Because of the lack of bubbles, sidra is drunk in a special way, which involves pouring it from a height so that it hits the side of the glass, aerating and frothing it. It then needs to be drunk within 30 seconds - before the froth disappears.
