Sardina pilchardus is caught in the Atlantic Ocean using traditional, sustainable methods, always choosing the ideal time of day and the ideal season, when they have the most fat, ensuring their juicy texture and exceptional flavour. During processing, the sardines are cleaned by hand, then rinsed in brine and grilled one by one, just as it was done in the old days, giving them the desired texture. They are then marinated in olive oil with chilli flakes and packed into tins by hand according to size. To enjoy them, we recommend serving them with fresh tomatoes or salted butter and thin slices of onion on toasted bread.
