Salmorejo is a traditional Spanish cold soup originating from the Andalusia region. Like gazpacho, salmorejo is a popular summer dish thanks to its refreshing character and easy preparation. The basic ingredients of salmorejo are olive oil, tomatoes, garlic, bread and vinegar, all blended to a smooth consistency. Compared to gazpacho, salmorejo is thicker.
