Recaredo has 46 hectares of its own vineyards in the best locations of "Alt Penedès", which are grown exclusively using organic methods. The harvest is 100% by hand, and the cavas are produced only at their own winery. All cavas undergo fermentation in the bottle for at least 30 months. Recaredo cavas are exclusively vintage cavas of Brut Nature quality level. All cavas age in the cellar on the lees with natural corks (no plastic). All cavas are riddled by hand using traditional methods. All cavas are disgorged without an ice bath. Each bottle of Recaredo Cava shows the vintage, the ageing period and the disgorgement date. Josep Mata Capellades, son of Recaredo Mata Figueres, founded Cavas Recaredo in Sant Sadurní d'Anoia in 1924. In the early days, Josep made cavas in his home in the historic centre of Sant Sadurní. Cavas Recaredo was a pioneer in producing absolutely dry cavas in the Brut Nature category, in ageing base cava wines in oak barrels, and in producing cavas with a long ageing period. Today the business is run by Josep's descendants - Josep and Antoni Mata Casanova. If you wanted to compare Recaredo wines to anything, their timeless, traditional orientation, based exclusively on the highest quality, can only be compared to Vega Sicilia.
