Gran Barquero Palo Cortado sherry, from the D.O. Montilla Moriles region, is made from the Pedro Ximenéz variety. This is a rather dry sherry with a clean, dark amber colour with copper glints. A delicate aroma of ripe fruit, salted caramel, roasted almonds and orange peel. A full and velvety flavour with good structure, nutty notes and a long dried-fruit finish. Gran Barquero Palo Cortado is made in the traditional way using the soleras system. Casks of American oak are stacked on top of one another. At the bottom are the casks with the oldest sherry, at the top the youngest, and the wine is gradually transferred downwards. Gran Barquero Palo Cortado thus ages for more than 25 years. It pairs perfectly with Iberian ham, mature cheeses, nuts and sausages. We recommend serving at a temperature of 12-14°C. Gran Barquero Palo Cortado is simply such a wonderful finish to a whole dinner that you won't want dessert or coffee! A brilliant choice for a social gathering or a soothing midday glass.
