Paleta serrana gift set

Paleta is the term for the front leg. The name serrano refers to the type of pig the ham is made from - namely the white domestic pig. Paletas weigh around 4-4.5 kg. The front leg (we apologise to connoisseurs and experts for this imprecise, layman's term - the correct term would simply be shoulder) is characterised by a more intense and pronounced flavour than jamón. In some parts of Spain, for example Catalonia, paleta is even preferred over jamón for its qualities. We select hams only from producers who can guarantee control over the entire process, from pig rearing to ham ageing. In our environment, paleta is a very popular ham, mainly thanks to its lower weight. All our hams are supplied in the so-called "V" cut. This means that on the outer part of the ham, once matured, a section of the hard rind and fat is cut away in a V shape, to eliminate the weight of waste when the customer slices it. Mould may appear on the surface of the ham. This mould is not a cause for concern nor grounds for a complaint. It is a completely natural part of the ham's ageing process. The mould can simply be removed with a cloth and a little oil, wiping it off the ham. The gift set contains the ham, a stand, a knife and an elegant carry bag.
