Due to its lower weight, paleta is characterised by a more intense and pronounced flavour than jamón. In some parts of Spain, for example Catalonia, paleta is even preferred over jamón for its qualities. The ham comes from the Iberian pig, which has a particular genetic trait. Its muscle tissue is so loosely packed that it allows fatty acids to penetrate it. A slice of Iberian ham is thus literally marbled with veins of fat, which is why it is delicately tender.
