Paleta iberica de Bellota, Montellano, approx. 5-6kg

Paleta Iberica de Bellota is the front leg of the black semi-wild Iberian pig. Paleta differs from jamón not only in size but also in the flavour of the meat. While jamón is more succulent, paleta offers a range of different flavour intensities, and the fat is not infiltrated into the muscle structure in such fine veins. In the finish, paleta is lightly sweet and very delicate. The meat is salted and dried in natural drying rooms for at least 24 months. Iberian pigs have a special genetic trait thanks to which the muscle is so loosely packed that it allows small veins of fat to penetrate it. A slice of Iberian ham is thus literally interwoven with veins of fat, making it wonderfully delicate. In the case of Paleta, this phenomenon is on a smaller scale than in Jamon. The designation "bellota" means that the pigs are fed exclusively on acorns, herbs and grass in the wild. The ham ages for 24 months.
