Pago de los Capellanes Reserva 2021 comes from the renowned family winery Pago de los Capellanes, based in the village of Pedrosa de Duero, in the very heart of the Spanish wine region of D.O. Ribera del Duero. The winery is known for its emphasis on vineyard work, low yields and a traditional approach to winemaking that allows the character of the local terroir to be fully expressed.

The 2021 vintage is considered very high-quality and well-balanced in Ribera del Duero. The combination of favourable climatic conditions and careful grape selection produced wines with pronounced aromatics, good structure, fresh acidity and long ageing potential.

Grape variety: 100% Tempranillo (Tinta Fina), the typical variety of the Ribera del Duero region.

Vineyard: The grapes come from the winery's oldest vineyards, some of which are planted with vines over 80 years old. The vineyards lie at an altitude of approximately 800–900 metres above sea level on clay-limestone, stony soils, which give the wine depth, elegance and a mineral character.

Production and ageing: After hand harvesting and thorough grape selection comes cold maceration and controlled fermentation in stainless steel tanks. Malolactic fermentation takes place naturally. The wine then ages for approximately 18 months in French oak barrels, where it gains complexity, subtle spiciness and structure.

Taste and aroma: The aroma shows ripe red and black fruit such as cherries, blackberries and plums, complemented by notes of cocoa, vanilla, sweet spice and light toast. On the palate the wine is full-bodied, velvety and harmonious, with fine, ripe tannins, fresh acidity and a long, elegant finish.

Food pairing: Recommended serving temperature 16–18 °C. It pairs wonderfully with roasted and grilled red meat, lamb, game, slow-braised dishes or with mature cheeses such as Manchego Aňejo or Zamorano.
