Pago de los Capellanes Doroteo 2018 wine comes from the prestigious family winery Pago de los Capellanes, based in the village of Pedrosa de Duero in the province of Burgos, at the very heart of the Spanish wine region of D.O. Ribera del Duero. Doroteo is an exclusive, limited edition, named in honour of the family's founding father, representing the highest expression of terroir and the historical depth of this winery's wines.
The 2018 vintage is considered exceptional thanks to even ripening, a stable growing season and balanced climatic conditions, producing wines with depth, a rich aromatic profile and excellent structure that beautifully reflect the character of the region.
Grape variety: 100% Tempranillo
Vineyard: The grapes come from a single, very old vineyard called "Majuelo Doroteo", where the vines are more than 90 years old. The soils are clay-stony and very poor in nutrients, which contributes to low yields and an intensive development of aromas and structural compounds in the grapes.
Production and ageing: After hand-harvesting and careful selection, traditional fermentation takes place, followed by long ageing, at least 36 months, in French oak barrels (225 l) and subsequent bottle ageing, which gives the wine great complexity, finesse and balance.
Taste and aroma: The wine presents an intense red to garnet colour. The aroma combines ripe black and red fruit with rich spicy and balsamic notes, delicate hints of tobacco, cocoa, cedar and vanilla. On the palate, the wine is powerful, harmonious and structured, with smooth, well-integrated tannins and a long, elegant finish, leaving an impression of depth and maturity.
Food pairing: Ideal served at a temperature of 16–18 °C. It pairs beautifully with rich meat dishes, braised lamb, grilled beef, game, or cured Iberico jamón and matured cheeses such as Zamorano, Mahon curado or Manchego Curado, where its structure and complexity can truly shine.
