Vineyard: The vineyards are on limestone soils with red clays and white marls at an altitude of approximately 850 m, which gives the wine mineral depth and balance. The grapes are hand-picked into small 15 kg crates, with an emphasis on selection already in the vineyard. The wine is made from more than a hundred plots with different slope orientations and microclimates within the Carraovejas valley, which contributes to its complexity, depth and ability to express the terroir of the whole area.
Ageing: After fermentation with indigenous yeasts, the wine aged for 12 months in French and American oak barrique barrels (225 and 600 l), after which it was gently fined using natural agents and bottled. This process ensures a combination of fresh fruitiness, a more complex structure and a fine texture.
Aromatics and taste: The wine is characterised by an intense fruity aroma of red and black fruit, especially cherries, plums and blueberries, complemented by delicate spicy and woody notes of vanilla and nutmeg. On the palate it is medium- to full-bodied, with smooth tannins and balanced acidity that brings elegance and freshness. Mineral undertones from the granitic and limestone soils add depth and length, while the harmonious finish combines fruit, delicate wood and spicy accents.
Food pairing: Thanks to its structure and complexity, it pairs wonderfully with dishes such as grilled or roasted red meat, braised lamb, game, mature cheeses or traditional Spanish specialities. The recommended serving temperature is 16–18 °C to allow the aromas and flavour profile to fully develop.
