Masiega is a bold soft blue sheep's cheese from the Granja Cantagrullas farm in Ramiro, Valladolid (Castile and León).
It is made from unpasteurised milk of Assaf and Castellana sheep and develops characteristic blue veining and an intense flavour with notes of mushroom, salt and pepper during ageing.
Ageing first takes place in a warm, humid chamber for 4-5 weeks, after which the cheese is wrapped in foil to complete its aroma and texture. Masiega is bold in its own right, ideal for pairing with full-bodied beers, red wines, whisky, bourbon or sherry, and represents a unique product of traditional Castilian sheep's milk, made with care and an emphasis on quality.
