Quality green Gordal olives with a mild flavour come from Spanish Andalusia, where they have soaked up plenty of sunshine, which helps them keep their best aroma and flavour. The olives are hand-stuffed with jalapeño peppers, whose kick will impress many a gourmet. They are good as a nibble on their own, but also make a great addition to any salad or other dish. The excellent large Gordal olives are also often called "royal" olives. The name gordal (meaning "fat" or "plump") comes from their round shape and large size. These olives have a low oil content and so are processed almost exclusively as table olives. They have a mild flavour, similar to Manzanilla olives, and a firm, meaty texture. Olives are a significant source of vitamins A and E, iron, calcium, potassium and magnesium.
