The cow's milk cheese Leña afinado from the family creamery Quesería Cultivo is a traditional Spanish smoked cheese made from fresh cow's milk.
After shaping it undergoes 4–6 weeks of ageing, during which it acquires a firmer structure and its flavour profile harmonises, and it is then slowly smoked over wood, giving it a delicate smoky fragrance and woody tones that complement the sweetness and meatiness of the milk.
Leña afinado is ideal on cheese platters, with dark bread, charcuterie or wine and beautifully enhances the flavour of hot and cold dishes alike with its full, aromatic taste.
