Ice Sidra, Hibernis, Martínez Sopeña Hermanos, 0.375l
A single-variety ice cider made from Verdialona apples, hand-picked during the last fortnight of December on a farm in San Justo.
Must obtained by traditional pressing. Its cryoconcentration gives rise to a higher sugar content, always above 35 °Brix, balanced constant acidity and a marked increase in the primary or varietal aromas of ripe apple. Fermentation and ageing of this enriched must takes place in a stainless-steel tank at a controlled temperature for at least 6 months. The resulting ice cider has an alcohol content of 11.5% vol. and is refined in French oak barrels for 6 weeks.
Tasting notes -
Appearance: golden yellow with bright glints, with fine, persistent bubbles
Nose: aroma of green and ripe apple and white fruit (peach and plum).
Palate: a sweet start giving way to a firm, sustained and refreshing acidity.

Brothers Roberto and Francisco Martínez Sopeña launched Cider El Gobernador in 1993. Since then the winery has grown, innovated and diversified its production while keeping an identity closely tied to the land.
The story of Cider El Gobernador began in 1993, when brothers Roberto and Francisco Martínez Sopeña, then aged 27 and 26, decided to bring to life an idea that had been taking shape for some time. The venture was quite a risky one given the huge tradition and respect that Asturias holds for the cider sector. But the Martínez Sopeña brothers were no newcomers, having run their family's well-known El Faraón cider mill in Villaviciosa since a young age. This gave them a broader view of the world of cider and was a key factor in the rapid growth of the company, which today is one of the highest-volume cider presses in Asturias.
They started out producing the natural cider El Gobernador, which gave the winery its name. Over time, through innovation and cooperation with the CHOP Sidra de Asturias Regulatory Board, they have continued developing new products to this day: alongside the aforementioned Cider El Gobernador, they make the ciders Sopeña (a traditional natural CHOP cider from Asturias), Españar (a new expression of natural DOP Cider from Asturias), Emilio Martínez Brut Nature (a natural sparkling DOP Sidra from Asturias) and Hibernis (ice cider), as well as the Llagar de Oles vinegar.
