Mahón Curado cheese from Quesos Binillubet is a traditional semi-hard to hard PDO cheese from the island of Menorca (Balearic Islands), made from fresh cow's milk of local herds, under the care of a family dairy with a long tradition.
The milk is processed using hand-crafted artisanal methods, and the resulting curd is shaped into the cheese's characteristic form, after which it ages in underground cellars for more than 5 months, during which it develops a more intense aromatic profile and a firmer structure. During ageing, a mixture of olive oil and paprika is often applied to the rind, helping to shape its typical orange-brown rind and develop a rich aroma.
In terms of flavour, Mahón Curado is full and intense, with a balanced combination of gentle saltiness, nutty and buttery notes, and a sweetly piquant finish that reflects the influence of the Mediterranean climate and Menorca's traditional production techniques. Its texture is firm, sometimes gently crumbly, with rich aromatic nuances that show best at room temperature.
Thanks to its full, intense and slightly piquant flavour, it is exceptionally versatile. It works wonderfully on cheese platters together with olives, dried fruit, nuts or fresh bread. It pairs beautifully with white and light red wines, but also stands out with beer or cider. Mahón Curado can also be grated over pasta, baked into dishes or added to salads, where its firmer structure and complex flavour enhance other ingredients.
