Capers are the unopened flower buds of the caper bush (Capparis spinosa), preserved in salt or a salt brine. The finest capers are called "nonpareilles" (incomparable). They are a popular ingredient in many cuisines around the world, most prominently in Mediterranean countries such as Italy, Spain and Greece. Capers are great in salads, sauces, pasta dishes, and with various meats such as ragù, fish or lamb specialities. Capers in brine can be used straight from the jar when cooking, while the finer capers preserved only in salt should be rinsed before use, so their flavour doesn't overpower the other ingredients in the dish. They contain plenty of antioxidants, which may help protect against various illnesses, including heart disease, and reduce inflammation. Capers are also a rich source of fibre, which is important for the digestive system and can help regulate blood sugar and cholesterol levels.
