It is based on a lifetime of experience, on the courage to have a dream, and on the ambition to turn one's own name into a synonym for prestige.  Every single bottle of Cava Joan Colet is the result of traditional processes built on daily dedication and effort. The ageing process takes place over 30 to 50 months.   A bright yellow, straw colour. Pale gold to very light. Very fine bubbles, forming beaded strings with a delicate crown. Aromas of bread and nuts. Complex, with a mix of tertiary notes reaching all the way to the finest pastry, without losing its citrus edge.  A complex palate, fresh, with a highly integrated bubble that dissolves and leaves a sensation of foam, a very balanced and long mid-palate with a delicately flavoured finish showing excellent ageing notes.
