Paleta is the term for the front leg of the black Iberian pig. It weighs around 4.5-5 kg – thanks to its smaller size and less rounded shape, it can be sliced into perfectly thin slices. It is characterised by its more intense and pronounced flavour. In some regions of Spain, e.g. in Catalonia, paleta is even preferred over jamón for its qualities.
The ham comes from the Iberian pig, which has a special genetic trait. Its muscle is so loosely packed that it allows fatty acids to penetrate it. A slice of Iberian ham is thus literally interwoven with veins of fat, making it perfectly delicate. Due to its lower weight, paleta ages for a shorter time than jamón. This one specifically for at least 18 months.
