Jamón Ibérico de Cebo from the Extremadura region. This is an exceptional ham from black, semi-wild pigs. If a pig does not reach the required weight during the montanera (the acorn-feeding period), it must be finished off afterwards with ordinary organic feed, usually grain and pulses. Unlike Bellota hams, Cebo-labelled pigs are not reared exclusively in the wild, and so are not fed solely on acorns and natural feed. The whole jamón weighs approx. 5kg. In terms of taste experience it can only be compared to genuine caviar, foie gras and the finest wines. In selected areas, black pigs are fed only on acorns. The Iberian pig has a special genetic trait: its muscle tissue is so loosely structured that it allows unsaturated fatty acids to penetrate it. A slice of Iberian ham is literally streaked with veins of fat, which is what makes it so delicately tender. We recommend ordering in whole-kilo cuts - e.g. 1kg, 2kg, 3kg - The cut is vacuum-packed.
