The cheese Isla Corazón comes from the family creamery Quesería Cultivo, which specialises in traditional craft processing of goat's milk in Spain. This cheese is made exclusively from fresh domestic goat's milk, ensuring a delicate, creamy structure and the typical gently tangy flavour of goat's cheeses.
After production the cheese is carefully smoked over wood, giving it a characteristic smoky fragrance and lightly earthy aroma profile. Smoking is carried out slowly so that the cheese does not lose its suppleness or its delicate tones of milky sweetness. This process also creates a delicate, smooth rind on the surface of the cheese with a typical light brown hue. Isla Corazón undergoes a short ageing period, during which its flavour harmonises.
Thanks to its gently smoky flavour, creamy structure and slightly earthy tones, it is a great addition to cheese platters with wine and nuts, as well as to tapas, salads or baked dishes, and to quiche, where it adds a smoky, gently goaty character without overpowering the other flavours.
