Grape variety: 80% Tinto Fino (Tempranillo), 10% Cabernet Sauvignon and 10% Merlot

Vineyard: The vineyards lie at an altitude of 800 metres above sea level and are planted in clay-limestone soils mixed with gravel and sand, which ensures excellent drainage and the wine's mineral character.

Ageing: The wine undergoes full destemming. Maceration lasted approximately 24 days. This was followed by ageing in barriques made from French Allier oak, of which around 30–40% were new, with the rest being two to three years old. The ageing period ranges between 15 and 18 months.

Taste and aroma: In the glass it shows a bright, intense ruby colour with violet hues. The nose is dominated by minerality, combined with fresh red fruit such as strawberries, cherries, complemented by delicate notes of mint, liquorice, amber and spiced undertones from ageing in the barrel. Medium to full body offers rich red fruit with pronounced minerality. The finish is long and complex.

Food pairing: Goes wonderfully with red meats, game, mature cheeses, quality charcuterie and mushroom dishes. It pairs excellently with beef steak, wild boar ragout, Iberian ham or truffle risotto. We recommend serving at a temperature of approximately 16–18 °C.
