The Capeliños winery is one of the oldest wineries of the Guímaro family in Ribeira Sacra. This wine is the result of a blend of the Souson, Mencía and Caíño Tinto varieties. Production includes 40% and 60% whole grape clusters; after 55 days of fermentation it moves into used French oak barrels for approximately 12-13 months, and it is during this time that it undergoes malolactic fermentation. Guímaro Finca Capeliños is a bold and complex red wine with a deep ruby colour. On the nose it offers an intense aroma of dark fruit, such as blackberries and blackcurrant, together with floral tones of violets and a delicate touch of oak. On the palate it has a medium- to full-bodied structure with firm tannins and balanced acidity. The taste of dark fruit is complemented by tones of chocolate, spice and minerals, leading to a long, elegant finish. This wine is best enjoyed after decanting, so its flavours and aromas can fully develop. It pairs excellently with grilled meats, hearty braised dishes and mature cheeses. Overall it is a powerful and refined wine that showcases the unique terroir of the Ribeira Sacra region. The ageing potential of this wine is 5-10 years.
