Gramona, Enoteca, D.O.Penedés, Cava, white sparkling wine, 0.75l

Cava Gramona Enoteca Brut, vintage 2004, is made from two varieties, Xarel·lo and Macabeo. The wine is very expressive and deep, the fruit accompanied by honeyed tones (baked apple, dried figs, candied orange peel, dried apricot), and a light floral touch is also present. The pronounced character of ageing is felt in hazelnuts, nougat, marzipan, cocoa and caramel. The Cava is very pleasant and full-bodied. Gramona Enoteca is made according to the traditional Champenoise method, whereby the first fermentation takes place in barrels of French oak, followed by secondary fermentation in the bottle, with the bottles turned by hand. The total ageing period is over 172 months with a cork closure. The vines come from vineyards more than 30 years old. The grapes are hand-picked and the whole production process is a craft process. The Cava is suitable for laying down. Pairing This cava pairs excellently with an entire tasting menu and certainly won't disappoint even at a simple toast. We recommend serving it chilled at a temperature of 8-10°C. The Gramona winery is a very old family business, whose Cava is highly regarded by experts and recognised in Spain as the Rolls Royce among Cavas. It also takes the environment into consideration, and the Cava can therefore be classed among organic and biodynamic wines.
