The unique Gamoneu del Valle cheese is produced in the town of Benia de Onís, in the municipality of the same name, using 80 % cow's milk and 20 % goat's milk.

It is a fat, ripened cheese with a natural rind, a smoky tinge and small patches of penicillium mould, which is caused by ripening in natural caves. It has a thin rind, which is due to the smoking stage. Its colour is toasted sienna, but it can also have reddish, greenish and bluish tints.
Inside, it has a hard to semi-hard, firm consistency with small, irregularly spaced eyes.

In the mouth it has a mild flavour with a smoky tinge and a slightly spicy taste. It is buttery with a flavour reminiscent of hazelnuts. 

Because it undergoes a smoking stage, this cheese has a smoky aroma which varies according to the maturity of the cheese. The riper the cheese, the smokier the aromas.
