Cider, or sidra in Spanish, is traditionally produced in the north of Spain, in the Basque Country and Asturias. Cider is dry, sour in taste and almost carbon dioxide-free. Due to the absence of bubbles, cider is drunk in a special way, which consists in pouring it from a height so that it hits the wall of the glass to oxygenate and foam. Afterwards, you need to drink the cider within 30 seconds - before the foaming disappears.
