Paella

Paella is a world-famous Spanish speciality. There are several types of paella - typical Valencian, seafood and mixed. Valencian paella is a combination of Bomba rice with vegetables, white beans, bean pods, meat and spices. The important ingredients are olive oil and saffron, which gives the rice its typical yellowish colour. Seafood paella and mixed paella, which is a combination of the two, are becoming increasingly popular. Real paella is cooked over an open fire using orange branches, pine branches and pine cones. The aromatic smoke is then reflected in the taste of the paella.
