Sherry

The world of sherry is magical, passionate and under-explored at the same time. These are specific wines from the south of Spain with a tradition of more than a thousand years, which can be both dry and sweet. The grapes are dried in the sun, then fortified - adding wine spirit (not in the Montilla Moriles region). Maturation is then carried out in a solera system, where the barrels are stacked on top of each other. The barrels with the most mature sherry are placed at the very bottom, while the barrel with the youngest sherry is on the top floor. The contents of the lower barrels are bottled and the contents of the higher tier are pumped into the space left vacant in exact proportion. Some of the sherry wines are not blended and are therefore vintage wines. The tradition and exclusivity is confirmed by the fact that even Shakespeare refers to sherry in his works.
