If you're cooking paella, we recommend Bomba rice; if you're cooking risotto for someone you want to impress, our recommendation is Acquerello rice of the Carnaroli Superfino variety. Acquerello rice is particularly worthy of attention due to its compactness of the grains and its remarkable amount of vitamins.
