Variety and processing: This exceptional decaffeinated coffee comes from the Colombian Huila region, specifically from the Descafecol processing station, which specialises in the gentle decaffeination of selective coffee. The coffee beans here come from various smallholder farmers in the area and are grown at an altitude of 1,600–1,900m above sea level. The beans are the well-known Colombian Caturra, Castillo and Colombia varieties, prized for their balance and delicate flavour characteristics.

The Sugar Cane method, also known as ethyl acetate decaffeination, is a natural process of removing caffeine that preserves the coffee's flavour characteristics. The ethyl acetate used in this process is obtained by fermenting sugar cane, making it a gentle and eco-friendly alternative to classic chemical methods. First, the green coffee beans are steamed and moistened to open up their structure, then repeatedly washed in an ethyl acetate solution, which selectively binds and removes the caffeine. After this step, the beans are washed again with clean water and gently dried. The result is a coffee with a minimal caffeine content (usually below 0.1%), which nevertheless retains its full aroma, body and complex flavour.

Flavour profile: This coffee offers tones of sweet spice and bitter chocolate. It has a rich, heavy body, delicate, subtle acidity and is ideal for espresso.
