El Maestro Sierra, Pedro Ximenez, D.O.Jerez, sherry, 0.75l

A sweet wine made from the Pedro Ximénez variety. The vinification process begins with the solera system, in which the grapes turn into raisins in the sun, increasing the sugar content and changing the physical and sensory uniqueness of the wine.  Wine alcohol is added to the resulting must to reach approximately 10º of alcohol, needed to stabilise the wine. During the following autumn and winter, the wine is clarified. The sediment is then removed. Alcohol is added again, up to 15º. It then remains in open barrels, where oxidative ageing takes place using the soleras and criaderas system over a period of 5 years. It is a dense, sweet, velvety and very flavourful sherry. It pairs perfectly with blue cheeses such as xavel or cabrales. Bodegas El Maestro Sierra is among the special gems of the Jerez region. The cellars were founded in 1830 by José Antonio Sierra and are now cared for by his descendants Pilar Plá and María del Carmen Borrego. Mother and daughter continue the family tradition and hand production in very limited quantities, which makes this sherry a highly prized gem for connoisseurs of this type of wine.
